American Flag Cookie Cake

Today I want to share with you this recipe to celebrate the 4th of July together. I feel very grateful and blessed for the opportunity that life gave me to be part of this beautiful country. Thank you United States for your continued support.


Ingredients
CHOCOLATE CHIP COOKIE

  • 1 cup unsalted butter, room temperature
  • 3/4 cup packed light brown sugar
  • 1/4 cup sugar
  • 3 eggs
  • 1 tbsp vanilla extract
  • 3 cups all purpose flour
  • 1 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 1/4 cups semi sweet chocolate chips

TOPPINGS 

  • 8 ounces cream cheese at room temperature 
  • 1/2 cup unsalted butter, at room temperature 
  • 4 cups powdered sugar
  • 1 tsp salt
  • 1 tsp clear vanilla
  • 1 cup blueberries
  • 3 cups raspberries
  • 1/4 cup white chocolate chips

Cookie Cake

1- Preheat oven to 350°F

2- Grease the sides of a 9×13 inch cake pan and place parchment paper in the bottom

3- Combine dry ingredients

4- Cream butter and sugars together about 3-4 minutes

5- Mix the eggs one at a time

6- Add the vanilla extract

7- Add the dry ingredients in two batches, mixing until combined. Dough will be thick and sticky

8- Stir in the chocolate chips

9- Press the dough evenly into the cake pan

10- Bake for 20 minutes or until the edges are lightly golden

11- Remove from oven and allow to cool completely in the cake pan

12- To remove this from such a large pan, use a cooling rack and a cardboard cake rectangle, place the cooling rack against the top of the cake pan, then flip it over. Immediately and quickly place the cardboard cake rectangle on top of the cookie cake (which is the bottom) and flip the whole thing over using the cooling rack.


Frosting

1- In a medium bowl, beat together the cream cheese and butter until creamy

2- Add salt and vanilla

3- With mixer on low, gradually add powdered sugar until completely combined


4- Spread half the frosting in an even layer on the cookie cake

5- Position the blueberries in the top left corner of the cake in even rows to form the blue portion of the flag

6- Position the raspberries in horizontal lines across the cake, leaving about 1 inch between each row, to form the stripes

7- Place half frosting into Decorative bag with Star Tips

8- Pipe frosting in between rows of raspberries.9-  Position the white chocolate chips between the blueberries to form the stars.
